Corned beef in a can is one product that we should be stocking on our shelves at home as meat becomes a bit tricky to find. I found this simple corned beef hash recipe. I personally use Mario’s Brand. There are other alternatives of course.
Ingredients
- 1 medium onion, chopped (about 1 cup)
- 1 (12 ounces/340 g) can of corned beef, cut into chunks
- 6 large potatoes, peeled and diced
- 1 cup beef broth
In a large deep skillet, over medium heat, combine the potatoes, corned beef, onion, and beef broth. Cover and simmer until potatoes are of mashing consistency, and the liquid is almost gone. Mix well, and serve.
Fun Fact: Today, around 80% of the global canned corned beef supply originates from Brazil. Corned beef production and its canned form remained an important food source during the Second World War.
